Vusi optained his basic training at CBC , and his in service bulk of my training was done through the Sheraton hotel and towers in Pretoria. 

 

What is your philosophy on food?
Innovation with understanding and respect of tradition. And cooking and presenting food in its best form.
What inspired you to become a chef?
The idea of taking ingredients and making something memorable with them and the power you have to make someone smile with your food.
Globally, which chef do you admire?
Grant Achatz, Heston Blumenthal, Marco Pierre White, Michael Laiskonis, and the Adria brothers.
If you couldn't be a chef, which position would you take up?
I think I would be in the property most defiantly or like one of those guys on CSI
Other than food and cooking, what inspires you?
People on the Times 100 list are always an inspiration. I’m easily influenced by movies, I am always ripping off movie quotes
What was your worst culinary catastrophe?
I was pushing a trolley into the restaurant with two poitjie pots on them, there was a groove on the floor i didn’t notice. I hit that groove and the one pot fell on the floor. The whole restaurant smelt like beef stew. Thank goodness for backup.
What is your fondest memory in the kitchen?
On my last day at the Sheraton I made the lunch buffet with one of my mentors and good friend Sammy, it was really nice to show him how far I had come from being the guy on the egg station.
