Knorr Bouillon Sweet Potato and Banana Soup

Ingredients

50ml olive oil

20ml butter

1 chopped onion

2 cloves garlic

40ml curry paste

2 peeled and chopped sweet potatoes

3 chopped baby marrows

5 chopped tomatoes

1 liter Vegetable Bouillon (made with KNORR Bouillon Paste)

1 chopped banana

Seasoning to taste

Coriander to garnish

Method

  • Heat oil and butter, sauté onions


  • Add garlic and curry paste, cook for 3 minutes and add sweet potato, baby marrow and tomatoes. Stir in to coat with curried onions


  • Pour in Vegetable Bouillon and bring to the boil


  • Reduce heat and simmer for 10 minutes


  • Remove form heat and blend until smooth, return to heat and simmer for a further 5 minutes


  • Just before completing, add the banana to the soup


  • Season to taste and serve
